APPLE OAT CRUMBLE 

This dish was born out of the need to have a staple dessert that is always a win that I can throw together in a flash when we're having guests over.  It's gluten, dairy and refined sugar free, but I promise you, no one would EVER know.  Breakfast, lunch, dinner, meet my new best friend: Apple Oat Crumble.  She's versatile, she's comforting, she's really really sweet.  And I love her.  xx- Sarah  {more after the jump}


APPLE OAT CRUMBLE

Gluten, Dairy and Refined Sugar Free


INGREDIENTS:

4 medium Fuji apples

3 cups of gluten free oats

1 lemon

7 tablespoons coconut sugar

1/4 teaspoon cinnamon

1/2 cup coconut spread or vegan butter

2 tablespoons oat flour (check the packaging to ensure it's gluten free, or make your own!)

sea salt

 

METHOD:

- Preheat oven to 350 degrees

- Peel, core and cut the apples into 3/4" slices

- In a large mixing bowl combine apples, juice of 1 lemon, oat flour, cinnamon and 3 tablespoons of coconut sugar.  Mix well.

- Spread the apples in a 9" pie dish and set aside.

- In a medium mixing bowl combine oats, coconut spread and 4 tablespoons of sugar and a hearty pinch of sea salt.  Using a fork mix ingredients, but do not thoroughly combine the spread, the clusters are good!

- Spread the oats on top of the apples and bake for 30-40 minutes, or until apples are soft

- Serve warm, with a scoop of coconut milk vanilla bean ice cream if you please!

YUM!!! That looks delicious~ I have yet to work with coconut sugar, but I'm a huge fan of all things coconut, so I can imagine it works wonderfully with the apples. Love fall baking! :9
