blue corn and blueberry pancakes

 

do you have days when ALL YOU CAN THINK ABOUT IS PANCAKES?  me too!  and yesterday was one of them.  so of course i had no choice but to take a stab at a healthier version of an old favorite.  it's healthIER, but let's not get carried away and make these everyday.  OK LOU MORA?  recipe and more after the jump!  xx- sarah

 

INGREDIENTS:

1/2 cup blue corn flower (i used this brand, which i believe to be gluten free)

1/2 cup all purpose flour (i used this gluten free brand)

2 tsp backing powder

1 tsp baking soda

2 tablespoon ground flax

1 cup of water

2 tablespoons grade A maple syrup

1 pinch sea salt

3/4 cup blueberries

coconut oil for cooking

grade A maple syrup to serve

 

METHOD:

- in a small bowl combine 2 tablespoons ground flax with 4 tablespoons of water and place in fridge to set

- in a large mixing bowl combine corn flour, all purpose flour, baking powder, baking soda and salt.  

- add the ground flax "eggs" to the large mixing bowl along with 1 cup of water and 2 tablespoons of maple syrup

- gently combine and avoid over mixing!

- heat a skillet over low heat and coat with olive oil.  spoon pancake batter into pan and cook on low heat until bubbles rise and pop in the middle of the pancake.  flip and cook another couple of minutes.  

- serve with fresh blueberries and high quality maple syrup.  enjoy!

{recipe makes enough to serve one very hungry pancake monger or two more restrained folks (approximately 6 pancakes}
